Mushroom Gravy
This recipe is great for keeping to the lower GI foods and suitable for a
diabetic diet.
What you need
- 1/2 pound fresh crimini mushrooms, thinly sliced
- 2 cups beef broth
- 1 large shallot, minced (2 tablespoons)
- 1 garlic clove, minced
- 2-3 Tbl Besan*
- Olive Oil
- Salt & Pepper
How to make it
- In a medium skillet or sauce pan, over medium heat, sauté shallots and garlic in about
2-3 Tablespoons of olive oil - do not brown
- Add mushrooms - do not salt - and allow to brown slightly
- Sprinkle Besan over the vegetables and cook for about 1-2 minutes
- Add about 1/4 cup of the broth and stir until lumps have dissolved
- Add the remainin broth a little at a time, making sure to stir out all
lumps before adding more
- Once all the broth has been added, add salt & pepper
- Cook until thickened
Good with meat or using vegetable broth in place of beef broth, this works beautifully as a vegetarian sauce
*Besan is ground chickpeas and can be purchased online or at a local
indian market. When used in gravy or sauces, there is no distinguishable
flavor. It is also excellent used to make Onion Bhaji's.
