Mushroom Gravy

This recipe is great for keeping to the lower GI foods and suitable for a diabetic diet.

What you need

  1. 1/2 pound fresh crimini mushrooms, thinly sliced
  2. 2 cups beef broth
  3. 1 large shallot, minced (2 tablespoons)
  4. 1 garlic clove, minced
  5. 2-3 Tbl Besan*
  6. Olive Oil
  7. Salt & Pepper

How to make it

  1. In a medium skillet or sauce pan, over medium heat, sauté shallots and garlic in about 2-3 Tablespoons of olive oil - do not brown
  2. Add mushrooms - do not salt - and allow to brown slightly
  3. Sprinkle Besan over the vegetables and cook for about 1-2 minutes
  4. Add about 1/4 cup of the broth and stir until lumps have dissolved
  5. Add the remainin broth a little at a time, making sure to stir out all lumps before adding more
  6. Once all the broth has been added, add salt & pepper
  7. Cook until thickened

Good with meat or using vegetable broth in place of beef broth, this works beautifully as a vegetarian sauce

*Besan is ground chickpeas and can be purchased online or at a local indian market. When used in gravy or sauces, there is no distinguishable flavor. It is also excellent used to make Onion Bhaji's.
