Pear Plum Pie

What you need

  1. 1 recipe Plain Pastry for double crust pie
  2. 4 medium bartlett pears, peeled, cored and sliced
  3. 1-2 cups fresh prune plums, seeds removed and cut into halves or quarters
  4. 1/2 cup brown sugar
  5. 1/4 cup cornstarch
  6. 2 tsp cinnamon
  7. 1/4 tsp salt
  8. 1/4 cup brandy
  9. 1 egg beaten with 1 tbl brandy

How to make it

  1. Line a 9 inch pie pan with pastry
  2. In a large bowl combine pears, plums, sugar, cornstarch cinnamon and salt - mix thoroughly
  3. Add brandy, stir and allow to stand about 10 minutes
  4. Spoon filling into pan and cover with top pastry
  5. Trim and crimp edges and brush with beaten egg
  6. Cut a few vents into upper crust and bake at 375 about 50-60 minutes, until golden brown and pears are soft.
