Hummus with Pepper

This is my own hummus with peppers and other flavorings to make it a centerpiece. Traditional hummus would be made with only the beans, tahini salt & pepper.

What you need

  1. 1 can garbanzo beans, drain but reserve the liquid
  2. 2 Tbl Sesame Tahini (traditionally you would use 4 or more Tbl)
  3. 1/4 - 1/3 cup rough chopped red onion
  4. 1/4 - 1/3 cup rough chopped red pepper
  5. 4-5 sprigs fresh cilantro leaves, coarse chopped
  6. 2 med cloves garlic, rough chopped
  7. Olive Oil
  8. Salt
  9. Pepper
  10. Pita Bread, Flat Bread, Fresh Vegetables, Vegetable Pickle (italian style vegetable pickle is a good choice)

How to make it

  1. Place beans, tahini, onion, red pepper, cilantro, salt and pepper into a food processor. Pulse until crumbly.
  2. Add about 2 tablespoons olive oil and process to a paste
  3. While processing, add bean liquid slowly until hummus reaches the desired consistency.
  4. Spread on a plate or spoon into a bowl and drizzle with a little olive oil. Sprinkle with some kosher salt.

Serve with breads, fresh vegetables and pickle. Hummus can be served thick or thin based on your preference.
