Plum Tomatoes with Garlic Oil & Thyme Recipe
What you need
- 1 dozen fresh, organic plum tomatoes, cut lengthwise in half
- Garlic Oil (Recipe follows)
- Fresh thyme leaves to taste
- Kosher or Sea Salt
- Fresh ground black pepper
- »«Garlic Oil»«
- 4 tbl olive oil
- 2 cloves garlic, whacked with the side of a chefs knife to
split the skins and flesh
- Pinch crushed red pepper flakes (optional)
How to make it
Garlic Oil
- Combine olive oil, garlic cloves and pepper flakes in a
saucepan
- Heat over low for 15-20 minutes until garlic is browned
and oil is aromatic - Do not let garlic burn!
Tomatoes
- On a decorative platter or large plate, lay tomato halves,
cut side up
- Drizzle with garlic oil to taste
- Sprinkle with thyme leaves, salt & pepper and serve
