Plum Tomatoes with Garlic Oil & Thyme Recipe

What you need

  1. 1 dozen fresh, organic plum tomatoes, cut lengthwise in half
  2. Garlic Oil (Recipe follows)
  3. Fresh thyme leaves to taste
  4. Kosher or Sea Salt
  5. Fresh ground black pepper
  6. »«Garlic Oil»«
  7. 4 tbl olive oil
  8. 2 cloves garlic, whacked with the side of a chefs knife to split the skins and flesh
  9. Pinch crushed red pepper flakes (optional)

How to make it

Garlic Oil

  1. Combine olive oil, garlic cloves and pepper flakes in a saucepan
  2. Heat over low for 15-20 minutes until garlic is browned and oil is aromatic - Do not let garlic burn!

Tomatoes

  1. On a decorative platter or large plate, lay tomato halves, cut side up
  2. Drizzle with garlic oil to taste
  3. Sprinkle with thyme leaves, salt & pepper and serve
