Pot Roasted Beef

What you need

  1. 1 2-3 lb beef roast (chuck is flavorful and lends itself to long cooking)
  2. Flour for dusting meat
  3. 2 onions, chopped
  4. 2 cups water or Beef broth
  5. 2 Tbl Kitchen Bouquet
  6. Fresh Garlic to taste
  7. Salt and Pepper to taste

How to make it

  1. Pre heat oven to 325».
  2. Dust meat with flour and brown on all sides.
  3. Add the seasonings and about 1 - 1 1/2 inches of water.
  4. Heat to simmer.
  5. Cover pan and transfer to the preheated oven.
  6. Roast for 3 hours, turning once.

If your pots won't go into the oven, transfer the roast to a baking dish and cover tightly. Pots with metal handles are a real asset in roasting anything. It is a good idea to have at least one.
