Pulled Pork Sandwich

Frank really enjoys a good sandwich for lunch or for dinner on nights he's going out dancing. I figured I'd post of few of his favorites since they're simple, and because the sandwich was invented as the first fast food...which we don't eat. Here's our 'fast food'. Check out also the Classic Ham and Turkey-wich.

What you need

  1. 1 piece 4 by 4 inches home made focaccia
  2. 3/4 to 1 cup leftover pulled pork or carnitas or any braised pork shoulder mixed with 2-3 tablespoons of sauce
  3. 3 slices of pepper jack cheese
  4. Dill pickle slices

How to make it

  1. Cut the focaccia in half so you have a top and bottom
  2. Toast lightly over an open flame (gas stove) or on a griddle or in a toaster
  3. Heat broiler
  4. Warm pork with sauce
  5. Place bottom focaccia on a baking sheet, top with pork then with cheese
  6. Place under broiler until cheese is just melted
  7. Transfer to a plate, top with pickle slices and top piece of focaccia
