Quick Gazpacho

This recipe is a great time-saver if you have an excellent canned tomato product. That means you'll be able to serve this delicious food year round. Very easy to serve in demitasse cups.

What you need

  1. 1 28oz. can Muir Glen organic peeled tomatoes
  2. 1-2 large garlic cloves cut in a couple of pieces
  3. 1 large onion, quartered
  4. 1 red bell pepper, seeded and quartered
  5. 1 slice whole-wheat bread, crusts removed and torn into pieces
  6. Red wine vinegar
  7. Coarse salt
  8. Fresh ground black pepper
  9. Olive Oil
  10. Fresh Parsley or Cilantro
  11. Optional: Chili peppers, minced
  12. »«Garnishes»«
  13. Toasted almond slivers
  14. Chopped, hard cooked egg
  15. Finely diced bacon, ham or prosciutto
  16. Finely chopped, seeded english cucumber

How to make it

  1. Place tomatoes and juice into food processor
  2. Add onion, garlic, bell pepper and bread
  3. Process to chunky consistency
  4. Add red wine vinegar to taste (start with 2 Tbl), salt and pepper - process about 1 minute
  5. Taste and adjust vinegar and seasonings (thin with a little water if desired)
  6. Add hot chili pepper if desired
  7. Process a further 30 seconds or so if needed
  8. Pour into a bowl and add parsley or cilantro and about 2 Tbl olive oil
  9. Stir to combine
  10. Chill at least 2 hours and up to 24 before serving
  11. Serve in demitasse cups dressed with toppings or serve toppings on the side
