Saffron Rice

This is a perfect compliment to the Baharat Spiced Shrimp!

What you need

  1. 1 cup Brown Basmati Rice
  2. 1 3/4 cups cold water
  3. 1 good pinch Spanish Saffron threads
  4. 1/2 to 1 tsp ground sumac
  5. 1/2 dried parsley leaves, crushed
  6. 1 Tablespoon each fresh parsley and fresh cilantro leaves
  7. Olive oil (Optional)

How to make it

  1. Combine water, saffron, sumac and dried parsley in a saucepan and bring to a boil over med-high heat.
  2. Add rice, return to the boil, reduce heat to low and cover.
  3. Cook 30-40 minutes just until all the water is absorbed.
  4. Turn off heat and stir in the fresh herbs
  5. Add a bit of olive oil if you like
