Saffron Rice
This is a perfect compliment to the Baharat Spiced Shrimp!
What you need
- 1 cup Brown Basmati Rice
- 1 3/4 cups cold water
- 1 good pinch Spanish Saffron threads
- 1/2 to 1 tsp ground sumac
- 1/2 dried parsley leaves, crushed
- 1 Tablespoon each fresh parsley and fresh cilantro leaves
- Olive oil (Optional)
How to make it
- Combine water, saffron, sumac and dried parsley in a saucepan
and bring to a boil over med-high heat.
- Add rice, return to the boil, reduce heat to low and cover.
- Cook 30-40 minutes just until all the water is absorbed.
- Turn off heat and stir in the fresh herbs
- Add a bit of olive oil if you like
