Salad with Tahini Dressing
The proportions are up to you. This amount of dressing will dress 4 side salads. It can be doubled easily.
What you need
- Butter lettuce leaves, torn
- Sliced fresh heirloom tomatoes
- Hard cooked eggs, sliced
- Roasted eggplant, peppers and zucchini
- »«Tahini Dressing»«
- 1/4 cup roasted tahini
- 1/4 tsp kosher salt
- 1 T dijon mustard
- Juice from 1/2 large lemon
- 1 tsp or to taste agave syrup or other sweetener
- water
How to make it
- Combine tahini, salt, mustard and lemon
- Whisk in water slowly to desired consistency (It shouldn't be too thick)
- Add agave and taste - adjust seasoning if needed
- Place lettuce onto individual salad plates
- Add some roasted vegetables and sliced eggs
- Top with sliced tomatoes
- Drizzle with dressing
