Grilled Shish Kabob

Serves about 4.

What you need

  1. 2 lb lamb sirloin cut into cubes
  2. 1 red bell pepper cut into 1 inch pieces
  3. 1 onion, cut in quarters, each quarter cut in half crosswise
  4. Olive Oil
  5. Fresh mint, minced
  6. Lemon Juice
  7. Ground Allspice
  8. Salt & Pepper

How to make it

  1. Combine lamb pieces, pepper and onion pieces in a mixing bowl
  2. Drizzle with olive oil to coat and add mint, lemon juice, allspice, salt & pepper and allow to marinate about 1 hour at room temperature, or 2 or more hours in the refrigerator
  3. Prepare hot coals
  4. Remove lamb from marinade and place on skewers, adding a couple pieces of pepper and onion per skewer
  5. Place directly over hot coals, turning to char all over the lamb
  6. When charred, check for doneness - if not cooked to your liking, move to the side of the grill and cover
  7. Check every few minutes until done
  8. Remove to a platter and allow to cool slightly
  9. Remove meat and vegetables from skewers

I like this with a salad of tomatoes and cucumbers with lemon vinaigrette
