Shrimp Salad
A very nice main dish. Of course, you could substitute or add any ingredients you like.
What you need
- 1 lb. cooked shrimp (small or medium are ideal)
- Greens of choice (I like romaine, but anything is good)
- 1 grated carrot
- 1 rib celery, finely diced
- 1 shallot or 2 green onions, minced
- 5-6 radishes, halved and sliced
- 1 avocado, diced
- Lemon cucumber or other cucumber
- Fresh garden tomatoes if in season (otherwise skip it)
- Juice of half a lemon or lime
- 1 recipe Creamy Italian dressing
How to make it
- Combine greens and other veggies
- Dress with a bit of dressing
- Mix shrimp with the lemon or lime juice and top the salad
- Serve additional dressing on the side
