Shrimp Salad

A very nice main dish. Of course, you could substitute or add any ingredients you like.

What you need

  1. 1 lb. cooked shrimp (small or medium are ideal)
  2. Greens of choice (I like romaine, but anything is good)
  3. 1 grated carrot
  4. 1 rib celery, finely diced
  5. 1 shallot or 2 green onions, minced
  6. 5-6 radishes, halved and sliced
  7. 1 avocado, diced
  8. Lemon cucumber or other cucumber
  9. Fresh garden tomatoes if in season (otherwise skip it)
  10. Juice of half a lemon or lime
  11. 1 recipe Creamy Italian dressing

How to make it

  1. Combine greens and other veggies
  2. Dress with a bit of dressing
  3. Mix shrimp with the lemon or lime juice and top the salad
  4. Serve additional dressing on the side
