Slow Cooker Spicy Beef

What you need

  1. 1 3 lb beef chuck roast, any cut
  2. Duck fat or Olive oil
  3. 2 stalks celery, cut in 2 inch lengths
  4. 3 carrots, cut in 2 inch lengths
  5. 1 medium onion, finely chopped
  6. 3 - 4 large garlic cloves, chopped
  7. 1 1/2 - 2 Tbl ground coffee beans
  8. 1 1/2 - 2 Tbl ground dried porcini mushrooms
  9. 1 Tbl ancho chili powder
  10. 1 tsp kosher or sea salt
  11. 2-3 sprigs fresh parsley
  12. 2 serrano chilis, whole
  13. 2 cups water

How to make it

  1. Blend ground coffee, porcini, ancho and salt and spread onto a tray
  2. Roll beef in spices all over, pressing in to form a good coating
  3. Quickly sear roast on all sides in fat
  4. Place all ingredients, including any remaining spice blend in a slow cooker set on low
  5. Cook 10-12 hours
  6. Remove beef and vegetables to a platter and cover lightly with foil
  7. Pour strained liquid into a saucepan and reduce by 1/3 or 1/2
  8. Butter can be whisked in at the end for a silky mouthfeel and nice flavor, but this is optional
  9. Slice beef and serve with vegetables and sauce

Leftover beef makes great tacos.
