Slow Cooker Spicy Beef
What you need
- 1 3 lb beef chuck roast, any cut
- Duck fat or Olive oil
- 2 stalks celery, cut in 2 inch lengths
- 3 carrots, cut in 2 inch lengths
- 1 medium onion, finely chopped
- 3 - 4 large garlic cloves, chopped
- 1 1/2 - 2 Tbl ground coffee beans
- 1 1/2 - 2 Tbl ground dried porcini mushrooms
- 1 Tbl ancho chili powder
- 1 tsp kosher or sea salt
- 2-3 sprigs fresh parsley
- 2 serrano chilis, whole
- 2 cups water
How to make it
- Blend ground coffee, porcini, ancho and salt and spread onto a tray
- Roll beef in spices all over, pressing in to form a good coating
- Quickly sear roast on all sides in fat
- Place all ingredients, including any remaining spice blend in a slow cooker set on low
- Cook 10-12 hours
- Remove beef and vegetables to a platter and cover lightly with foil
- Pour strained liquid into a saucepan and reduce by 1/3 or 1/2
- Butter can be whisked in at the end for a silky mouthfeel and nice flavor, but this is optional
- Slice beef and serve with vegetables and sauce
Leftover beef makes great tacos.
