Spicy Chicken Soup

What you need

  1. 1 recipe chicken broth with chicken at room temperature
  2. 2 hot italian link sausages (casings removed) or 1/3 - 1/2 lb bulk
  3. 3-4 cups broccoli including peeled stems and leaves, cut into pieces
  4. 1 onion, chopped
  5. 2-3 cloves garlic, minced
  6. 1/4 cup red bell pepper, diced
  7. 2 tbl tomato paste
  8. 1 cup frozen green peas (optional)
  9. Olive oil
  10. Kosher salt
  11. *Oregano, parsley or other fresh herb

How to make it

  1. Heat olive oil in a large soup pot
  2. Add sausage, breaking up with a wooden spoon - cook until nicely browned
  3. Add onion and red pepper with 1/2 tsp kosher salt -- cook until onion is translucent and pepper is tender
  4. Add garlic, tomato paste and about 1 tbl minced fresh oregano* leaves -- stir and cook about 2 minutes
  5. Add chicken broth, chicken and broccoli -- cook just until broccoli is tender, but still bright green (you can add the stems and leaves reserving floret to add just a few minutes before finish)
  6. Add green peas and turn off heat
  7. Sprinkle some fresh chopped oregano over and serve with grated parm or romano cheese
