Sweet Potato Soup with Italian Sausage

What you need

  1. 2 sweet italian sausages, removed from casings and broken into pieces
  2. 1 large or 2-3 small red sweet potatoes, peeled and diced
  3. 1 cup red lentils, rinsed
  4. 1 small onion, finely diced
  5. 2 cloves garlic, minced
  6. 1 tsp dried parsley
  7. 1 tsp dried basil
  8. crushed pepper flakes to taste
  9. 5-6 cups broth or water or combination
  10. Kosher salt
  11. Black pepper
  12. Olive oil

How to make it

  1. Heat olive oil in a large soup pot
  2. Add sausage and sauté until browned
  3. Add onion and cook until onion is soft
  4. Add sweet potatoes and cook about 5 minutes
  5. Add garlic, dried herbs and 1/2 tsp kosher salt - cook stirring for just a minute
  6. Add lentils, broth and black pepper
  7. Bring to a boil, reduce heat and cover - cook 15-20 minutes until sweet potato is tender and lentils are cooked

Really nice to let it sit covered for up to an hour to let the flavors combine - or overnight in the fridge.
