Sweet Potato Soup with Italian Sausage
What you need
- 2 sweet italian sausages, removed from casings and broken into pieces
- 1 large or 2-3 small red sweet potatoes, peeled and diced
- 1 cup red lentils, rinsed
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp dried parsley
- 1 tsp dried basil
- crushed pepper flakes to taste
- 5-6 cups broth or water or combination
- Kosher salt
- Black pepper
- Olive oil
How to make it
- Heat olive oil in a large soup pot
- Add sausage and sauté until browned
- Add onion and cook until onion is soft
- Add sweet potatoes and cook about 5 minutes
- Add garlic, dried herbs and 1/2 tsp kosher salt - cook stirring for just a minute
- Add lentils, broth and black pepper
- Bring to a boil, reduce heat and cover - cook 15-20 minutes until sweet potato is tender and lentils are cooked
Really nice to let it sit covered for up to an hour to let the flavors combine - or overnight in the fridge.
