Taco Beef and Cauliflower Casserole
A simple, comforting main dish.
What you need
- 1 lbs ground beef 85/15
- 1 chopped red or sweet onion
- 1 large minced garlic clove
- 1 chopped jalapeno
- 1 14 oz. can tomatoes (a brand like Muir Glen doesn't have too much liquid, which makes a better result)
- 1 pkg (10-12 oz) frozen cauliflower rice*
- 1 tbl ancho chili powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp onion granules
- 1/2 tsp garlic granules
- Kosher or Himalayan Pink Salt
- Black pepper
- 1/2-3/4 lb grated cheddar cheese, divided
How to make it
- Cook ground beef with 1/2 tsp salt in a skillet until just slightly pink
- Add onion, garlic and jalapeno with another 1/4 tsp salt - cook until vegetables are tender
- Add spices and stir until well incorporated and fragrant
- Add frozen cauliflower and canned tomatoes with juice
- Cook over medium heat until tomatoes are hot and softened and cauliflower is cooked
- Turn off heat and stir in half of the cheese
- Pour into a 9 x 13 inch baking dish or casserole
- Top with remaining cheese
- Bake at 350º - 375º for 30 minutes until cheese is melted and casserole is bubbly
*Cauliflower Rice is one of the new, hip, healthy food trends. It's low carb and makes a great alternative to mashed potatoes when it's mashed, or to white rice when it's "riced". You can make it yourself easily in a food processor, but it's pretty readily available in freezer sections. Frozen has the added advantage of having been blanched, so it cooks a little faster (nice in this type of dish).
