Organic Chicken, Feta and Spinach Pizza

You might think this is too simple to be satisfying, but it's really wonderful, and you won't get up from the table feeling stuffed.

What you need

  1. 1/2 lb. organic chicken thigh meat, cut into 1 inch pieces
  2. 2 x 4 inch organic chicken sausages, casings removed
  3. 1/4 cup dry white wine
  4. 1 lb. organic fresh spinach leaves, cooked and drained well
  5. 1/3-1/2 cup greek feta block, diced
  6. 1/2 cup grated mozzarella cheese
  7. 1/4-1/3 cup grated parmesan cheese
  8. 1 tbl fresh oregano leaves, lightly chopped
  9. 1 clove garlic, grated
  10. Olive oil
  11. 1 tbl fresh parsley, lightly chopped
  12. 1 medium Roma tomato, diced
  13. 1 recipe pizza dough
  14. Salt & Pepper

How to make it

  1. Place 2 tbl olive in a small bowl and add grated garlic and oregano - let stand
  2. Preheat oven to 450-500º
  3. Slice or break up chicken sausages
  4. In a sauté pan, cook sausage in 1 tbl olive oil
  5. Remove to paper towels to drain
  6. Add chicken to hot pan and brown on all sides
  7. Add white wine and 1/2 tsp salt and cover
  8. Reduce heat and finish cooking chicken (this will only take a few minutes)
  9. Remove chicken pieces to paper towel to drain
  10. To assemble pizza, divide pizza dough and roll into two approximately 12 inch rounds (mine are never truly round!)
  11. Brush with the olive oil/oregano mixture and add toppings. Start with grated mozzarella, then about half the grated cheese and half the feta, then add sausage, chicken and spinach. Top with remaining cheese
  12. Sprinkle roma tomatoes over top and bake for about 10 minutes, until edges are lightly browned and cheese is just beginning to melt
  13. Remove from oven and sprinkle with parsley
  14. Let stand about 5 minutes before slicing
