Cucumber Sandwich with Hummus and Herbs
This is a perfect vegetarian meal, whether for lunch alone or with salad for a dinner. I like this open face and have written this accordingly, but you could make it as a traditional sandwich. Serves one.
What you need
- 2 slices your favorite whole grain bread or our whole grain bread
- Cucumber slices to cover (English cucumbers will need about 6-8 slices per piece of bread)
- 4 Tbl Lentil Hummus or Pepper Hummus
- Whole leaves from fresh basil, parsley, cilantro, arugula, etc. any or a combination
- Kosher salt & black pepper (optional)
- Olive oil (optional)
How to make it
- Toast the bread if desired
- Divide hummus between slices and spread to the edges
- Place cucumber slices in a single layer (can overlap slightly)
- Sprinkle with salt & pepper if desired (This is about your taste - if the hummus is very salty, you may not need any more seasoning)
- Top with fresh herb leaves and drizzle with optional olive oil
