Shortcut Tacos

Lower calorie and faster than Tilapia Tacos Supreme.

What you need

  1. 1 lb. Tilapia fillets
  2. 6 La Tortilla Factory Smart & Delicious tortillas at room temperature
  3. Favorite fresh salsa (refrigerator section - be sure to check ingredients/calories)
  4. 1 bunch fresh cilantro
  5. 2 cups finely shredded cabbage
  6. 1 large grated carrot
  7. 2 cups finely shredded lettuce
  8. 1 can vegetarian refried beans or use one of the beans method from Tilapia Tacos Supreme recipe
  9. Kosher Salt
  10. Black Pepper
  11. Hot Sauce (Optional)

How to make it

  1. Heat refried beans or prepare recipe from Tilapia Tacos Supreme
  2. Coarsly chop cilantro
  3. Heat a non-stick skillet over medium heat
  4. When hot, add 2 tablespons olive oil
  5. Salt and pepper tilapia
  6. Place into the skillet
  7. Cook, turning once until done and flaky

> To assemble: Place a tortilla on a plate, place some fish in the center, top with a spoonful of beans and a nice mound of greens and some cilantro. Top with salsa and hot sauce if desired.
