Margherita Pizza

You might think this is too simple to be satisfying, but it's really wonderful, and you won't get up from the table feeling stuffed.

What you need

  1. 1 recipe Basic Pizza Dough
  2. 1 recipe Basic Pizza Sauce (this will be slightly more than you need)
  3. 3/4 lb of shredded Mozzarella cheese (Use a good quality cheese as this is a foundational flavor in the dish, not just glue.)
  4. 4 ripe, medium sized Roma tomatoes, thinly sliced
  5. 2 cups chopped or julienned fresh basil leaves
  6. 1 cup grated Romano cheese
  7. Olive Oil (optional)
  8. Chopped fresh garlic (optional)

How to make it

  1. Preheat oven to 450-500º degrees with pizza stone inside
  2. Roll out pizza dough to approximately 12 inches (basic recipe makes two 12 inch rounds)
  3. If desired, brush the entire surface with olive oil
  4. Spoon a thin layer of pizza sauce over the top, leaving about 1/2 inch at edges
  5. Spread half the shredded Mozzarella cheese evenly over the sauce
  6. Place sliced tomatoes over the cheese and sprinkle with additional chopped garlic (optional)
  7. Top with half the basil
  8. Sprinkle half the grated Romano cheese over the top
  9. Using a pizza peel, place on baking stone and bake for 10-20 minutes, until edges are golden brown
  10. Remove from oven and let sit about 3-5 minutes before slicing
  11. Repeat for second pizza with remaining ingredients
