    It can be challenging to find ways to make entirely vegetarian meals. One of the things I've found most helpful is to have a good variety of fresh herbs and spices on hand to incorporate into my dishes. If my herbs aren't producing, I always pick up one or two when shopping. Parsley, cilantro, basil and sage are wonderful additions to many dishes. Citrus is another helpful ingredient. Fresh lemon, orange or lime zest adds delightful freshness to many dishes. I consider two spices to be critical:
      Saffron for soups, legumes or grains adds a depth and roundness of flavor to low fat recipes Smoked Spanish Paprika adds the same aroma and a similar type of flavor as bacon or ham
      • Super Split Pea Soup
      • Sprinkle on zucchini, asparagus or any vegetable with salt & pepper before sautéing
