One of my favorite vegetarian meals is built around summer squash. Any recipe calling for zucchini can in fact use any variety of summer squash. These days, I grow rampicante which is an italian heirloom variety. I prefer the flavor to standard zucchini. If I purchase summer squash, it's typically yellow with curved neck or lumps and alternatively romanesco, which is a zucchini with pale ridges running lengthwise from blossom to stem. If you base a meal on summer squash, you should use the ones that have the best flavor. Flavor is in the taste buds of the diner. Pick what you like best. Any of these recipes can use any type of summer squash interchangeably. |
