Ham or Sausage Strata

Strata is italian for 'layer'. Stratas are baked egg dishes with bread, veggies and/or meat with cheese and custard. They are delicious for breakfast or brunch because they are largely prepared ahead and can be served warm or at room temperature.


10 slices white bread (sour dough preferred)
1/2 lb. ham or bacon
1/2 lb. shredded cheddar or longhorn cheese
1/4 cup chopped onion
2 cups milk
10 eggs
1/2 tsp salt
pepper
1/2 tsp dry mustard
  • Preheat oven to 325-350º
  • Cut crust from bread and butter each slice.
  • Cut into 2 inch squares and place in a greased 9 x 3 inch casserole
  • Layer grated cheese, bacon or ham and sauté onions
  • Beat eggs and add milk, salt, pepper and mustard
  • Pour over dish and refrigerate overnight
  • Bake for 45-50 minutes until center jiggles very slightly

    Note: Sausage works well too and you can add fresh mushrooms
