Ham & White Bean Soup

About the simplest, filling meal I have ever made. Perfect for cold, blustery weather.
1 lb. white beans, such as haricot or navy or lima
1 leftover hambone with meat
1 large onion, peeled and cut in half
1-2 fresh bay leaves, or 3-4 dried
Water
- Rinse beans and soak overnight in cold water to cover by 2 inches
- Drain and rinse beans and pick through for any foreign matter
- Place hambone, beans, onion and bay in a large soup pot
- Pour in water to cover ingredients (a small portion of the hambone might stick up)
- Turn on heat to medium and bring to a low boil, uncovered
- When it reaches the boil, cover and reduce heat to low
- Cook for 90 minutes to 2 hours, stirring and turning ham bone occasionally
- Taste beans for tenderness after 90 minutes - if cooked properly, turn off heat and add salt if needed (probably won't be needed) or continue cooking for another 30 minutes
- Adjust seasonings and allow to stand briefly before serving
