Ham Frittata

1 1/2 - 2 cups diced ham
1 small onion, diced
1/4 cup diced red bell pepper
2 cups chopped green cabbage
1 tsp dried parsley or 1 tbl fresh minced parsley
1/4 cup grated romano cheese
Fresh ground black pepper
4 eggs
2-3 tbl cream or milk
Duck fat or desired fat for sautéing and preparing the baking dish
  • Preheat oven to 375º
  • Heat fat in a skillet
  • Add ham and brown lightly on all sides
  • Add onion, red pepper and cabbage and cook until lightly browned and softened and mixture is dry
  • Remove from heat and allow to cool to room temperature
  • Beat eggs with cream
  • Add parsley, romano cheese and black pepper
  • When ham mixture is no longer hot, add to eggs and blend well
  • Pour into a greased pie pan and bake for 20-30 minutes until center jiggles just slightly
  • Allow to stand a few minutes before serving
