         When I was a child, we briefly raised a few pigs for food. During that period, my mom would roast pork shoulder in the oven on special occasions. We would all compete for the 'candy' which is how I thought of the crispy skin on top. I sometimes cook it for friends and pass out small pieces of 'candy' for guests to try. It is genuinely appreciated!

    Now I often do pulled pork barbeques on my smoke cooker; a recipe I have perfected over the years. My sister discovered a carnitas recipe for the oven which I do during the cooler weather months when we have spare-the-air periods. Pork tenderloins with balsamic glaze or medallions are a lean and delicious treat. No matter how it's prepared, pork is delicious!
